Alright! You all know I love to cook with my oils, so when Young Living posted on their blog, three great grilling marinades, I HAD to try one out! And since it was Father’s Day, what better time to try!!
I ended up choosing the Mediterranean marinade. For no other reason than because I had all of the ingredients!
Ingredients:
- 3/4 cup olive oil
- 1/2 cup of soy sauce
- 1 tbsp red wine vinegar
- 1 clove of garlic, minced
- 1 drop of Oregano essential oil
- 2 drops of Lemon essential oil
- 1 drop of Black Pepper essential oil
This was so easy! I got myself a glass 9 X 13 pan, measured out all of my ingredients, and then dumped (or dripped) it all in! Then, I just wisked it up! (If you’d like a good side dish, save 1/2 a cup of this mixture, before you put the meat in) Then all I had to do was add my meat! I used 2 beef steaks, but this would compliment any protein, I’m sure. Just let it marinate for 1-4 hours before grilling
So, I like my meats and side dishes to compliment each other. I saved 1/2 a cup of the marinade before I added my meat. To that, I added 1/4 cup of torn fresh parsley and then 2-3 cups of chopped fresh veggies I had carrots, zucchini and mushrooms on hand, but really you could use anything! Especially since it’s that time of the year! Snap peas, greenbeans, squash, anything out of the garden would be great!! I let this veggie mixture marinate in its own glass bowl for the same 1-4 hours as the meat. I ended up sautéing these in a pan and served them up with a little bit of pasta right along side the beef.
Hope you try this one out! My family loved it! Everyone went back for seconds! (Even my husband who was at first skeptical and a bit irritated that I hadn’t cooked a baked potato!)
